Step 1
Cut the kumquats in half lengthwise and place them in a bowl of water. Collect all the seeds and wrap them in cheesecloth, placing them with the kumquats. Cover and leave overnight. Place 2 plates in the refrigerator. In a pot, combine the kumquats, lemon juice, 1.25 liters of water, and the cheesecloth with the seeds. Bring to a boil, reduce the heat, cover, and simmer for 30-45 minutes.
Step 2
Meanwhile, warm the sugar in the oven at 150°C (300°F) for 10-15 minutes, spreading it on a baking sheet. Add the warm sugar to the pot with the kumquats, set to low heat, and cook for 5 minutes without allowing it to boil vigorously. Bring to a boil again and cook for another 20 minutes. Check the readiness of the jam by dropping a bit on a plate from the freezer; if the drop sets immediately, the jam is ready.
Step 3
Remove the cheesecloth with the seeds and pour the jam into hot sterilized jars. Seal tightly. Cool and store in a dark, cool place for 6-12 months.
