- 33% Cream - 12 fl oz
- Trimoline - 1.8 oz
- Sugar - 1.8 oz
- Milk - 7 fl oz
- Whole egg - 2.1 oz
- Ground coriander - 0.4 oz
- Liquid dark chocolate - 2.8 oz
- Kvass wort - 3 fl oz
- Borodinsky Bread - 0.7 oz
Step by Step guide
Step 1
Bring a mixture of 100 ml of milk, 100 ml of cream, trimoline (a type of inverted sugar used in pastry making), and coriander to a boil. Pour it into previously whisked egg yolks with sugar and cook to make a custard sauce. Strain the mixture.
Step 2
Add the chocolate, sour mash, remaining cold cream, and milk.
Step 3
Pour the prepared mixture into the ice cream maker. Blend before serving.
Step 4
Sprinkle the finished ice cream with Borodinsky bread crumbs and coriander.
