Ingredients
- Sugar - 2.1 oz
- Milk - 17 fl oz
- Farm fresh eggs - 3 pieces
- Safflower Oil - 2 fl oz
- Wheat Flour - 10.6 oz
- Salt - 1 teaspoon
- Dry yeast - 0.2 oz
Step by Step guide
Step 1
First, take three eggs and separate the whites from the yolks (put the whites in the refrigerator), add salt and sugar to the yolks. Blend everything until bubbles appear. Yeast pancakes really love sugar, so don't be afraid to add a little extra. Add the remaining ingredients (yeast, flour, oil, milk), it's better to use cold milk and add 300 ml first, then another 200 ml. Mix well to avoid lumps and achieve a homogeneous mass. I mix everything in a food processor.
Step 2
Place the batter in a warm, draft-free place (BETTER IN THE OVEN AT ABOUT 40–122°F FOR ABOUT AN HOUR). When the batter has doubled in volume, stir it to release the air and let it rise again.
Step 3
After the batter has risen, gently fold in the whipped egg whites until soft peaks form and bake immediately.
