Description
A recipe from Piedmont, where hazelnuts grow abundantly and are naturally included in many dishes. The hazelnut spread 'Nutella' also originates from northern Italy. In these round 'kisses', ground hazelnuts are mixed directly into the dough, and then pairs of cookies are glued together with chocolate, hence the name: the kisses of mature ladies are said to be just as strong and sweet. In shape, baci di dama resemble macarons, and many culinary historians believe that French almond pastries originated from this Piedmontese dessert. In any case, making 'kisses' is much simpler than making macarons, and the enjoyment from them is just as great.
Ingredients
- Hazelnut - 3.5 oz
- Butter - 3.5 oz
- Sugar - 3.5 oz
- Wheat Flour - 3.5 oz
- Bittersweet Chocolate - 3.5 oz
Step by Step guide
Step 1
If the hazelnuts are not peeled from the dark skin, place them in a preheated oven at 356°F for 5 minutes, then wrap them in a kitchen towel and roll them between your palms on the table. The skins will remain on the towel. If the hazelnut kernels are white, simply toast them.
Step 2
Chop the nuts in a blender until they are coarsely crushed. Do not grind them too finely, or they will turn into a paste.
Step 3
Use a mixer to blend the nuts with the butter and sugar until the sugar is dissolved.
Step 4
Sift the flour and gradually incorporate it into the butter-nut mixture while continuing to stir.
Step 5
Knead the dough until smooth and refrigerate for 1 hour.
Step 6
Take 1 heaping teaspoon of the dough, roll it into a ball, and gently flatten it. Place it on a baking sheet lined with parchment paper.
Step 7
Prepare the remaining "Kiss Cookies" in the same way, placing them on a baking sheet 2 cm apart from each other.
Step 8
Bake in a preheated oven at 356°F for about 15 minutes. Allow to cool completely.
Step 9
Prepare the filling. Break the chocolate into small pieces and place them in a bowl.
Step 10
Melt the chocolate in the microwave, taking it out and stirring every 10 seconds.
Step 11
Spread chocolate on half of the 'Kiss' cookies and set aside for 15 minutes.
Step 12
Cover the filling with a second cookie to create a sandwich. Place in the refrigerator to let the chocolate set properly. Serve the "Lady's Kisses" cookies as an appetizer or alongside a cup of espresso.
