Description
Lamington cookies are a delightful treat made from soft sponge cake squares that are dipped in chocolate and rolled in desiccated coconut. They are perfect for afternoon tea or as a sweet snack anytime. Enjoy them with a cup of coffee or tea!

- Salt - ½ spoons
- Coconut flakes - 7.8 oz
- Liquid dark chocolate - 7.8 oz
- Butter - 4.2 oz
- Wheat Flour - 5.6 oz
- Chicken Egg - 3 pieces
- 10% cream - 4 fl oz
- Vanilla extract - 1 tablespoon
- Sugar - 3.5 oz
- Baking Powder - 1 tablespoon
Step by Step guide
Step 1
Preheat the oven to 356°F. Grease a baking pan with butter and dust it with flour, then set it aside. Combine the dry ingredients: flour, salt, and baking powder.
Step 2
Separate the egg yolks from the whites. Whip the whites together with the sugar in a large bowl, then add the softened butter, yolks, and vanilla, and mix thoroughly. Pour the flour mixture into the bowl and knead until you have a smooth and consistent dough. Pour it into a prepared baking pan and bake for about twenty minutes. Let it cool, cut into approximately 16 pieces, and set aside.
Step 3
Melt the chocolate in a double boiler. In a saucepan, heat the cream, mix it with the chocolate, and keep it on the heat for one minute, stirring thoroughly until a smooth mixture is achieved. Place the shredded coconut in a large flat plate. Dip each cookie individually into the chocolate-cream mixture and roll it in the coconut, then place it on a rack and let it cool for at least an hour.
