Description
Sklandrausis is not a spell, but a Latvian open pie. In Russia, it is sometimes referred to as a skland pie. The essence is that a basket made of rye dough, kneaded with pork fat and buttermilk, is filled with a mixture of potatoes and carrots. It doesn't resemble a dessert very much, but sklandrausis is enjoyed with butter and honey, sprinkled with sugar beforehand.
Ingredients
- Coarsely Ground Rye Flour - 14.1 oz
- Butter - 4.4 oz
- Sugar - 1 tablespoon
- Salt - ½ spoons
- Carrot - 7 pieces
- Potato - 2 pieces
- Sour Cream - 2 spoons
- Honey - 2 spoons
- Chicken Egg - 1 piece
- Milk - 3 fl oz
Step by Step guide
Step 1
Prepare the necessary ingredients.
Step 2
Peel the carrot, chop it into large pieces, and boil until tender.
Step 3
Cook the coarsely chopped potatoes separately.
Step 4
Dissolve the sugar and salt in 250 ml of warm water.
Step 5
Combine the flour with 100 grams of softened butter, add water, and knead the dough for 5–7 minutes until it becomes soft enough to roll out.
Step 6
Roll out the dough to a thickness of 3–5 mm, cut out circles with a diameter of 8 cm, and fold the edges of the dough to create baskets with a 1 cm high rim. Transfer the baskets to a baking sheet lined with parchment paper.
Step 7
Blend the carrot together with the sour cream, honey, and egg.
Step 8
Mash the potatoes into a puree with milk and butter.
Step 9
Spoon the mashed potatoes into the baskets, then top with the carrot puree.
Step 10
Bake in an oven preheated to 392°F for 15–20 minutes.
