Description
This recipe is for those who often find their first and even second pancake comes out a bit lumpy. Thin lavash makes a great substitute for tender pancake batter, especially when the rolls are generously brushed with beaten egg before baking: in the oven, the lavash will soften, develop a golden crust, and nearly lose its tough bread-like quality. Another tip is to add a bit of semolina to the cottage cheese filling. This won't affect the flavor at all, but you'll be sure that the thickened cottage cheese won't leak out of the roll at the most crucial moment.
Ingredients
- Armenian Lavash - 2 pieces
- Cottage cheese - 8.8 oz
- Raisins - 1.8 oz
- Sugar - 2.5 oz
- Vanilla salt - 0.4 oz
- Chicken Egg - 2 pieces
- Whole egg - 1 piece
- Semolina - 2 spoons
- Butter - 1.1 oz
- Milk - 1 fl oz
- Ground Cinnamon - to taste
- Salt - to taste
Step by Step guide
Step 1
Drain the cottage cheese in a sieve and let it drain, especially if it is too moist. Transfer the cottage cheese to a bowl, add sugar (40 g), salt, vanilla sugar, 2 eggs, and a pinch of salt.
Step 2
Blend the mixture in a blender until smooth and creamy.
Step 3
Add 2 tablespoons of semolina to the filling and mix well.
Step 4
Add the raisins and mix again. Let the filling sit for about ten minutes.
Step 5
Cut each lavash sheet into three strips along the longer side, and then cut each strip in half.
Step 6
In a separate bowl, whisk the egg yolk.
Step 7
On one edge of the lavash, place a couple of tablespoons of the cheese filling and roll the lavash into a tube, tucking in the sides to prevent the filling from spilling out.
Step 8
Brush the other edge of the lavash with egg yolk and press it firmly onto the tube.
Step 9
Grease the bottom of a baking dish with butter, and arrange the lavash tubes seam-side down in a single layer.
Step 10
Add milk to the remaining beaten egg yolk, mix well, and generously brush the top of the tube with the resulting mixture. If there is any leftover yolk, pour it into the mold as well.
Step 11
Sprinkle the rolls with cinnamon and the remaining sugar, then place them in a preheated oven at 392°F for 20 minutes.
