Lavender Cake
Ingredients
- All-purpose flour - 7.1 oz
- Brown Sugar - 5.3 oz
- Baking Powder - 1 teaspoon
- Saffron - a pinch
- Salt - ½ teaspoon
- Plain Yogurt - 5.3 oz
- Grapeseed Oil - 3 fl oz
- Butter - 1.8 oz
- Lemon Zest - 1 tablespoon
- Lavender flowers - 4 teaspoons
- Powdered Sugar - 7.1 oz
- Lemon Juice - 5 tablespoons
- Egg - 1 piece
Step by Step guide
Step 1
In one bowl, mix all the dry ingredients for the cake (flour, sugar, salt, baking powder, saffron, 2 teaspoons of lavender flowers).
Step 2
In a second bowl, mix all the wet ingredients (both types of oil, egg, yogurt, lemon zest).
Step 3
Gently fold the wet ingredients into the dry ingredients and mix everything with a spatula until smooth.
Step 4
If the baking pan is not silicone, line it with parchment paper. If it is silicone, just lightly grease it with vegetable oil.
Step 5
Pour the batter into a rectangular cake pan (you can also use a round one for a sponge cake) and place it in a preheated oven at 180°C for 50-55 minutes.
Step 6
Bake until a toothpick comes out clean; it doesn't have to be completely dry.
Step 7
Remove the cake from the oven, without taking it out of the pan, poke it in several places with a toothpick to a depth of 1-2 cm, and evenly pour half of the glaze over it.
Step 8
Let it sit for 15 minutes, remove from the pan, transfer to a plate, and pour the second half of the glaze over it.
Step 9
Allow to cool completely and serve with tea.
Step 10
To prepare the glaze: in a saucepan, place half of the powdered sugar and squeeze in the lemon juice. Place the saucepan over low heat and stir constantly until the sugar dissolves. Pour half of this glaze over the cake immediately after baking and let it sit for 15 minutes.
Step 11
Mix the second half of the glaze with the lavender flowers, place it back on the heat, bring to a gentle boil, and simmer on low heat for 1-2 minutes. This will allow the syrup to thicken slightly. Just be careful not to burn the syrup. Add the remaining powdered sugar, mix until thickened, and then pour it completely over the cake. You can add a bit of purple food coloring to the second glaze.
