Lavender Cupcakes
Ingredients
- Milk - 5 fl oz
- Wheat Flour - 4.2 oz
- Lavender flowers - 4 tablespoons
- Sugar - 4.9 oz
- Baking Powder - 1½ teaspoons
- Butter - 4.2 oz
- Egg white - 1 piece
- Red Food Coloring - to taste
- Lavender flowers - 12 stems
- Powdered Sugar - 8.8 oz
Step by Step guide
Step 1
In 120 ml of milk, add 3 tablespoons of dried lavender, cover, and place in the refrigerator for a few hours or overnight if possible. Do the same with 25 ml of milk and 1 tablespoon of lavender for the frosting, in a separate container.
Step 2
Preheat the oven to 338°F.
Step 3
Place the flour, sugar, baking powder, and 40 grams of butter in a mixing bowl and beat on low speed until well combined.
Step 4
Pour the lavender-infused milk prepared for the cupcakes into the batter. Mix well.
Step 5
Add the egg and beat until combined.
Step 6
Line a 12-cup muffin tin with paper liners. Spoon the batter into the cups, filling them 2/3 full, and bake in the preheated oven for 20–25 minutes.
Step 7
Let the cupcakes cool slightly before removing them from the tin.
Step 8
For the frosting, beat together the powdered sugar, 80 grams of butter, and food coloring using an electric mixer.
Step 9
Reduce the speed to add the lavender milk prepared for the frosting. Beat on high speed until smooth for about 5 minutes, no longer.
Step 10
Once the cupcakes are cool, spread the frosting on top and decorate with a sprig of lavender if available.
