- Honey - 5.3 oz
- Sugar - 10.6 oz
- Milk - 13 fl oz
- Whole egg - 14 pieces
- Baking Powder - 0.2 oz
- Lavender flowers - 0.4 oz
- Activated Baking Soda - 0.2 oz
- Cream - 10 fl oz
Step by Step guide
Step 1
Make honey lavender caramel: heat the honey until it begins to bubble and thicken, turning a caramel color. Pour in the milk and cream and bring to a boil, then remove from heat and let steep for twenty minutes.
Step 2
Strain the milk mixture, bring it back to a boil, and add the egg yolks. Heat to 180°F in a double boiler, then strain and let it rest overnight in the refrigerator on an ice bath. Churn in an ice cream maker the next day.
Step 3
To make the decoration, prepare the caramel: melt sugar in a saucepan, and when it has melted and turned a caramel color, add baking soda and baking powder. As soon as the caramel begins to foam, remove it from the heat and pour it onto a sheet of parchment paper. Spread it evenly in a thin layer and leave it to set.
Step 4
Once the caramel has hardened, break it into large pieces and use it to decorate the ice cream.
