Layered panna cotta with strawberry and passion fruit

Ingredients

  • Cream (40%) - 10 fl oz
  • Strawberry - 17.6 oz
  • Passion Fruit - 5 pieces
  • Water - 7 fl oz
  • Sugar - 5.6 oz
  • Gelatin - 1.8 oz

Step by Step guide

Step 1

Soak the gelatin in separate bowls of water in the following amounts: 1) 12 grams 2) 24 grams 3) 12 grams.

Step 2

First layer (Passion Fruit): Pour the insides of the passion fruits into a saucepan, add 20 grams of sugar, and cook until the film from the seeds comes off and the juice is clear. Once ready, remove from heat and add 12 grams of gelatin (from the bowl). Stir until it dissolves. When the passion fruit cools (to the point where it doesn't burn your hand), pour it into a mold (I used a plastic round lid from a cake box). Place it in the refrigerator and wait for the layer to set (to turn into firm jelly).

Step 3

Second layer (Cream): Take 300 ml of cream, pour it into a saucepan, add 100 ml of water and 100 grams of sugar, and cook while stirring constantly for 15 minutes. Then remove from heat and add 24 grams of gelatin. Stir until it dissolves and wait for it to cool, just like the first layer. Once cooled, pour it over the already set passion fruit layer and place it in the refrigerator, waiting for it to set.

Step 4

Third layer (Strawberry): Cut 500 grams of strawberries into small pieces and blend them into a puree. Pour it into a saucepan and add 100 ml of water and 40 grams of sugar, bringing it to a boil. Remove from heat, add 12 grams of gelatin, wait for it to cool, and pour it over the cream layer, also waiting for it to set.

Step 5

When the last layer has set, dip the entire mold in warm water for a few seconds to loosen the cake from the mold. Then take any dish you like and flip the cake onto it so that the bottom layer is on top. That's it! Enjoy your meal))

Step 6

*You can replace strawberries and passion fruit with whatever you prefer.
