Ingredients
- Cottage cheese - 5.3 oz
- Puff Pastry - 8.8 oz
- Sour Cream - 1 tablespoon
- Egg white - 2 pieces
- Lemon - 1 piece
- Honey - 2 tablespoons
- Light Raisins, Seedless - to taste
- Dried Apricots - to taste
Step by Step guide
Step 1
Beat 1 yolk with honey and sour cream using a mixer. Add the cottage cheese and mix thoroughly until smooth.
Step 2
Fold in the zest of one lemon, a handful of raisins, and chopped dried apricots (a handful).
Step 3
Roll out the puff pastry into a thin layer. Spread the cottage cheese mixture over the pastry and carefully roll it up with the filling, pressing gently. Cut the roll into slices about 1.5–2 cm thick with a very sharp knife.
Step 4
Preheat the oven to 356°F. Line a baking sheet with parchment paper, place the cottage cheese rolls at some distance from each other, and brush with yolk. Bake until golden brown, for 15–20 minutes. Serve warm.
