Description
You can use any seasonal berry instead of strawberries: raspberries, blackberries, blueberries, etc.

- Strawberry - 10.6 oz
- Puff Pastry - 10.6 oz
- 10% cream - 7 fl oz
- Mascarpone Cheese Unagrande - 4 tablespoons
- Vanilla salt - 2 teaspoons
- Red Grape Juice - 1 fl oz
- Powdered Sugar - 7.1 oz
Step by Step guide
Step 1
Roll out the pastry thinly, using powdered sugar instead of flour. Cut out circles or squares, whichever you prefer, make cuts in several places to prevent puffing during baking, and place them on a baking sheet lined with parchment paper. Bake in the oven at 392°F for 7–10 minutes until golden brown.
Step 2
For the cream, whip 200 ml of cream to stiff peaks, add 4 tablespoons of powdered sugar and 4 tablespoons of mascarpone cheese. Whip everything together again and place in the refrigerator.
Step 3
Prepare the sauce. In a saucepan, place 100 g of strawberries, 2 teaspoons of vanilla sugar, 2 tablespoons of powdered sugar, and 50 ml of red wine (can be replaced with any fruit or berry wine). Set over high heat and reduce for 3–5 minutes. Blend the mixture with a blender.
Step 4
Lay out the base of the puff pastry, spread 1 teaspoon of sauce on top, pipe the cream over the entire surface using a pastry bag, and finally arrange the strawberries on top. Dust the pastries with powdered sugar.
