Description

According to Bulgarian traditions, a similar pie (banitsa) can be made with salty homemade cheese, feta, herbs, meat, vegetables, fruits, berries, and more.

Ingredients

  • Wheat Flour - 7.1 oz
  • Butter - 9 teaspoons
  • Vinegar essence - ½ spoons
  • Salt - a pinch
  • Cottage cheese - 17.6 oz
  • Chicken Egg - 3 pieces
  • Honey - 3 spoons
  • Sugar - 4 spoons
  • Lemon - 1 piece
  • Water - 4 spoons

Step by Step guide

Step 1

Mix 1 tablespoon of melted butter with warm water, vinegar, and a pinch of salt for the dough. Gradually add the flour to the liquid and stir until smooth.

Step 2

Divide the dough into 9 equal portions, roll them out into thin, evenly-sized flatbreads, and let them dry slightly.

Step 3

Meanwhile, zest the lemon using a grater.

Step 4

Whisk 3 eggs with a whisk or fork and mix thoroughly with soft cottage cheese. Add 2 tablespoons of melted butter to the mixture and blend with a mixer until smooth.

Step 5

Add the warmed honey, sugar, a pinch of salt, and lemon zest to the cheese mixture and stir again.

Step 6

Grease the sides and bottom of the baking dish with butter. Place the first flatbread in the dish, evenly spread 1/8 of the cheese mixture on top, and cover it with the second flatbread. Next, layer the second portion of the cheese mixture, cover it with the third flatbread, and continue assembling the pie in this manner. Generously brush the top flatbread with butter.

Step 7

Bake the pie in an oven preheated to 374°F for about 40 minutes.
