Layered Pumpkin Cream Parfait
Ingredients
- Corn Starch - 1 teaspoon
- Chestnut puree - 1 cup
- Cream (40%) - 1½ cups
- Brown Sugar - ½ cup
- Maple syrup - ¼ cup
- Ground Cinnamon - 2 teaspoons
- Grated Ginger Root - 1 teaspoon
- Ground Nutmeg - ½ teaspoon
- Salt - ¼ teaspoon
- Vanilla extract - 2 teaspoons
- Ladyfinger Cookies - 12 pieces
Step by Step guide
Step 1
In a glass, mix the cornstarch and 1 teaspoon of water.
Step 2
In a small saucepan over medium heat, combine the pumpkin puree, ½ cup of cream, brown sugar, maple syrup, cinnamon, ginger, nutmeg, and salt. Cook, stirring, for about 5 minutes until the sugar dissolves.
Step 3
Pour in the cornstarch mixture, bring to a boil, reduce heat, and cook for another 2 minutes, whisking gently.
Step 4
Strain the mixture through a sieve into a bowl and cool.
Step 5
In a chilled bowl, whip the chilled cream with vanilla using a mixer.
Step 6
Transfer one-third of the whipped cream into the pumpkin mixture and gently fold it in, then add the remaining whipped cream and fold gently again.
Step 7
Break the cookies into pieces.
Step 8
In cups or glasses, layer half of the pumpkin mixture, sprinkle with crushed cookies on top, and repeat the layers once more. You can top with whipped cream for decoration.
