- Wheat Flour - 8.8 oz
- Ground Almonds - 2.8 oz
- Ground Cinnamon - ½ teaspoon
- Ground Nutmeg - ½ teaspoon
- Ground clove - ½ teaspoon
- Baking Powder - 1 teaspoon
- Butter - 2.8 oz
- Activated Baking Soda - ½ teaspoon
- Citrus Zest Mix - to taste
- Honey - 6 oz
- Egg white - 1.1 oz
- Powdered Sugar - 3.5 oz
- Orange zest - 1 piece
Step by Step guide
Step 1
Preheat the oven to 356°F. Line two baking sheets with parchment paper. In a large bowl, mix all the dry ingredients and the orange zest.
Step 2
Place a saucepan over low heat with the butter and honey, stirring until the butter melts and the mixture becomes homogeneous. Add the juice of half an orange, pour the mixture into the bowl with the dry ingredients, and knead until a firm dough forms. Cover and let cool.
Step 3
Once the dough has cooled slightly, divide it into 30 pieces, roll them into balls, and flatten them slightly. Place them on the parchment paper, spaced 2 cm apart, and bake for 15 minutes until golden brown. Let cool slightly on the parchment, then transfer to a wire rack to cool completely.
Step 4
For the glaze, beat the powdered sugar with the egg white, adding a little orange juice to achieve a liquid consistency.
Step 5
Dip each gingerbread into the glaze and leave on the wire rack until fully set.
