Description
You can also add fried potatoes to the filling for this pie. It will turn into a baked version of vichyssoise.
Ingredients
- Leek - 17.6 oz
- Garlic - 1 head
- Spanish onions - 1 head
- 10% cream - 3 fl oz
- Butter - 3.5 oz
- Olive Oil - 0 fl oz
- Gruyère cheese - 7.1 oz
- Puff Pastry - 17.6 oz
- Chicken Egg - 1 piece
- Salt - to taste
Step by Step guide
Step 1
In a mixture of butter and olive oil, sauté finely chopped red onion until soft. Add the finely chopped white part of the leeks and cook over medium heat, stirring constantly and watching to ensure the onion does not burn.
Step 2
As soon as the leek begins to soften, add the finely chopped garlic and continue to sauté, stirring.
Step 3
Once the garlic has softened, pour the cream into the onions and garlic, and simmer for a few minutes, stirring constantly. Remove from heat and stir in the grated cheese. Season with salt and pepper.
Step 4
Divide the prepared yeast puff pastry into two parts and roll both out into thin sheets. Place one sheet in a baking tray, evenly distribute the mixture of onions, garlic, and cheese on top, and cover it with the second sheet of pastry. Seal the edges, brush the pie with beaten egg, and make a few holes on the top surface to allow steam to escape. Place it in an oven preheated to 356°F for 20–25 minutes.
