Ingredients
- Butter - 2.1 oz
- Olive Oil - 2 tablespoons
- Onion - 1 head
- Leek - 3 pieces
- Garlic - 1 clove
- Wheat Flour - 1 tablespoon
- Sour Cream - 2 tablespoons
- Grated Pecorino Pepato Cheese - 3.5 oz
- Ground Caraway - 1 teaspoon
- Puff Pastry - 2 lbs
- Chicken Egg - 1 piece
- Salt - to taste
- Spices - to taste
Step by Step guide
Step 1
In a skillet, heat the butter and olive oil over medium heat. Add the finely chopped onion and sauté for 2 minutes, stirring constantly. Add the sliced leek and minced garlic, and sauté for 5 minutes, or until the leek is soft. Add the flour and sauté for another minute. Then add the sour cream and simmer until the mixture thickens slightly. Transfer to a bowl and add the Parmesan and crushed caraway. Season with salt and spices and let cool.
Step 2
Preheat the oven to 392°F. Place a greased baking sheet in the oven for a while to heat up.
Step 3
Roll out the dough and cut out 64 circles. On half of the circles, place 2 teaspoons of filling, lightly brush the edges with egg, and cover with the remaining circles. Seal the edges with your hands or with a fork. Lightly brush the top with egg and transfer to the heated baking sheet.
Step 4
Bake for 25 minutes or until the pies rise and become golden.
