Ingredients

  • Milk - 4 fl oz
  • Sugar - 2 oz
  • Butter - 2.6 oz
  • Chicken Egg - 1 piece
  • Wheat Flour - 12.3 oz
  • Champignons - 31.7 oz
  • Dried Chinese mushrooms - 1.1 oz
  • Onion - 11 oz
  • Salt - to taste
  • Ground Black Pepper - to taste
  • Dry yeast - 0.1 oz

Prepare all the ingredients.

Warm milk, whisk together with sugar, 4 grams of salt, and yeast.

Add the eggs and milk mixture to the flour. Knead the dough by hand or with a mixer using a dough hook for 15–20 minutes, adding the butter.

Leave in a warm place until it doubles or triples in volume.

Soak the dried white mushrooms in water and simmer gently for about 40 minutes, until tender. Then cool and slice into thin strips.

Rinse the mushrooms under running water with some flour, then slice them thinly.

Peel the onion and chop it into fine strips.

Place the mushrooms in a dry skillet and sauté them without oil until some moisture evaporates and they begin to stick to the pan.

Add vegetable oil to the mushrooms and continue frying for a few more minutes.

In a clean skillet, melt the butter, add a pinch of salt and the onion. Sauté over medium heat until the onion is tender.

Add both types of mushrooms to the onions and sauté for 2 minutes, stirring to combine the flavors. At the end, season with salt and pepper to taste.

Pass the prepared mushroom filling through a meat grinder.

Divide the dough into balls weighing 20 grams each.

Roll out the dough, place 20 grams of filling in the center, and pinch to seal. Bake in a preheated oven at 356°F for 25 minutes.
