Description

Instead of tea infusion, pour brewed instant coffee (it's better not to add fruits in this case) or honey. The cream can also be different. Mine is called lemon curd, and it can be made and enjoyed independently of the cake. You can also spread the cake with something else. For example, without eggs but with butter.

Ingredients

  • Wheat Flour - 8.8 oz
  • Citrus Zest Mix - 0.4 oz
  • Black tea - 1.8 oz
  • Strawberry - 10 pieces
  • Meyer Lemon Juice - 1 fl oz
  • Chocolate eggs - 4 pieces
  • Butter - 1.8 oz
  • Sugar - 7.1 oz
  • Lemon - 1 piece

Step by Step guide

Step 1

Whisk the eggs with sugar until a stable homogeneous mass is achieved.

Step 2

Carefully pour in the hot tea infusion to prevent the egg whites from curdling. The stronger the infusion, the richer the color of the cake will be.

Step 3

Add the zest from 1 lemon.

Step 4

While stirring, add the flour. The consistency of the batter should be like condensed milk.

Step 5

Place in an oven preheated to 356°F.

Step 6

Grease the baking pan with butter (if necessary), pour in half of the batter.

Step 7

Squeeze the lemon juice (without zest) — it will be needed for the cream. Cut the leftover pieces into cubes. Place them in the pan. Add the strawberries as well.

Step 8

Pour in the remaining batter. Place in the oven and wait for 40–50 minutes.

Step 9

For the cream, mix the lemon juice with sugar.

Step 10

Whisk the eggs (not too vigorously, just until homogeneous), and add to the lemon mixture. Let it sit for 20 minutes.

Step 11

After 20 minutes, pour the mixture into a saucepan, add the butter, and place over medium heat. Cook, stirring constantly! This is very important to prevent the eggs from curdling! Stir until the mixture thickens.

Step 12

Remove from heat, pour into a cold container, and let it cool.

Step 13

After the time has elapsed, take the biscuit out of the oven, cut it into 2 layers. Spread the cream between the layers, on top, and on the sides.

Step 14

For added beauty, you can decorate the top with lemon slices and strawberries. It's up to your aesthetic preference.

Step 15

Place the creation in the refrigerator for a few hours. It is necessary for the cake to soak and become soft and juicy.
