- Butter - 7.9 oz
- Sugar - 3 cups
- Wheat Flour - 3 cups
- Salt - a pinch
- Farm fresh eggs - 6 pieces
- Meyer Lemon Juice - 6 fl oz
- Citrus Zest Mix - 1½ tablespoons
Step by Step guide
Step 1
Preheat the oven to 356°F. Line a 23x33 cm baking dish with parchment paper, allowing the paper to hang over the edges. Grease it with butter.
Step 2
For the crust, beat the butter and 0.5 cups of sugar in a food processor until light and fluffy. Sift 2 cups of flour with salt. While continuing to mix the butter-sugar mixture on low speed, gradually add the flour until crumbly.
Step 3
Gather the dough into a ball with your hands. Press the dough evenly into the greased parchment-lined dish. Place the dish in the refrigerator to chill for 30 minutes.
Step 4
Bake the chilled crust in the oven for 15–20 minutes until light brown. Remove from the oven and cool for 10 minutes.
Step 5
For the filling, beat together the eggs with lemon juice and lemon zest. Mix 1 cup of flour with 2.5 cups of sugar. Add the flour mixture to the egg-lemon mixture. Mix until smooth and liquid. Pour the lemon layer over the cooled crust.
Step 6
Bake in the oven for 30–35 minutes. Remove the dish with the finished bars from the oven and let it cool completely!
Step 7
Only after it has completely cooled, remove the bars from the dish, cut into squares, and dust with powdered sugar.
