Ingredients

  • Glutinous Rice Flour - 6.3 oz
  • Almond - 5.3 oz
  • Raw cane sugar - 3.5 oz
  • Meyer Lemon Juice - 1 fl oz
  • Citrus Zest Mix - 2 pieces
  • Soy Vanilla Milk - 4.4 oz
  • Salt - a pinch
  • Baking Powder - ½ teaspoon
  • Poppy seed paste - 2 tablespoons

Step by Step guide

Step 1

In a bowl, mix the flour, poppy seeds, sugar, baking powder, and salt. Add the juice and zest of 2 lemons, yogurt, and a few tablespoons of water if needed to knead a firm dough.

Step 2

Form small balls from the dough with your hands and slightly flatten them. Place the cookies on a baking sheet lined with parchment paper.

Step 3

Bake in the oven at 356°F for 25 minutes or until the cookies turn golden brown.
