Lemon Biscuit with Sour Cream Maple Cream

Ingredients

  • Egg white - 4 pieces
  • Sugar - 5.3 oz
  • Vanillin - 1 piece
  • Sour Cream - 8.8 oz
  • Wheat Flour - 3.5 oz
  • Maple syrup - 8 tablespoons
  • Lemon - 1 piece

Step by Step guide

Step 1

Separate the egg whites from the yolks. Place the yolks in a bowl, add half of the sugar, and beat.

Step 2

Beat the egg whites with the remaining sugar until a thick foam forms.

Step 3

Add 1/3 of the egg whites to the yolks and gently mix (do not whisk!).

Step 4

Add the sifted flour and the grated zest of one lemon to this mixture and mix again.

Step 5

Add the remaining egg whites and gently mix once more.

Step 6

Pour the batter into a mold and bake for about 35 minutes at 356°F.

Step 7

While the batter is baking, prepare the cream: mix the sour cream with the maple syrup.

Step 8

Once the cake is ready, let it cool. Then remove it from the mold and cut it into 2 parts. Spread cream on each part, then join both halves together. Coat the entire cake on the outside (you can decorate the top with some berries).
