Lemon Chocolate Parfait with Strawberries
Ingredients
- Whole egg - 5 pieces
- Sugar - 3.5 oz
- Meyer Lemon Juice - 4 fl oz
- Salt - a pinch
- Citrus Zest Mix - 4 teaspoons
- Whipped Cream - 12 fl oz
- Chocolate - 3.5 oz
- Strawberry - 31.7 oz
Step by Step guide
Step 1
Whisk the egg yolks, sugar, lemon juice, grated zest, and salt in a bowl. Place over a water bath, constantly whisking, for about 6 minutes, until the mixture reaches a temperature of 70-167°F. Remove from heat and let cool at room temperature.
Step 2
In another bowl, mix 60 ml of cream and chopped chocolate. Place over a water bath and melt, stirring, until smooth. Let cool at room temperature.
Step 3
Whip the remaining cream to stiff peaks.
Step 4
In 8 wine glasses or dessert cups, layer half of the whipped cream, then 60 ml of lemon mousse, followed by 2 tablespoons of chopped strawberries, and repeat the layers once more. Cover with plastic wrap and chill. Then top with the remaining whipped cream and sprinkle with chocolate shavings. Fresh strawberries, raspberries, or red currants can also be used for decoration.
