Description
You can substitute lemons with oranges, and combined with cinnamon, it can be a nice Christmas option.
Ingredients
- Butter - 4.4 oz
- Chicken Egg - 1 piece
- Wheat Flour - 7.1 oz
- Powdered Sugar - 3.5 oz
- Meyer Lemon Juice - 1 fl oz
- Citrus Zest Mix - 2 pieces
- Baking Powder - ¼ spoons
- Salt - a pinch
- Sugar - 3 spoons
Step by Step guide
Step 1
Beat the butter and sugar in a bowl with a mixer (or a fork/whisk) until creamy.
Step 2
Crack an egg into the mixture and beat until it becomes light and fluffy.
Step 3
Add the flour, lemon juice and zest, baking powder, and salt, and mix until a dough ball forms (add more flour if the dough is too wet). Cover the dough with a lid and refrigerate for 2 hours, or until it becomes firm.
Step 4
Preheat the oven to 180 °C.
Step 5
Roll out the dough on a floured surface to a thickness of ½ cm. Use a glass, cookie cutters, or a knife to cut out cookies and place them on a baking sheet (line it with parchment paper to prevent sticking). Sprinkle with sugar and bake for 10-12 minutes (my baking took 20-25 minutes) until the edges are light brown. Remove the baking sheet from the oven and let the cookies cool.
