Lemon Cream Pie

Ingredients

  • Wheat Flour - 6.2 oz
  • Butter - 2.6 oz
  • Powdered Sugar - 1.4 oz
  • Lemon - 6 pieces
  • Granulated sugar - 6.2 oz
  • Egg white - 7 pieces
  • Cream (40%) - 7 fl oz
  • Salt - a pinch

Step by Step guide

Step 1

Take one egg and separate the yolk from the white. Whip the egg white.

Step 2

Place the flour, powdered sugar, softened butter, salt, yolk, and 1 tablespoon of water into a bowl and knead until a stiff dough forms. Put the dough in the refrigerator for 30 minutes.

Step 3

Roll out the dough thinly and place it in a greased pie dish. Prick the bottom with a fork and brush with the whipped egg white. Bake at 392°F for 20 minutes.

Step 4

Grate the zest of 6 lemons and squeeze the juice.

Step 5

Whip the eggs and granulated sugar until a thick, homogeneous mixture is obtained. Add the lemon juice, grated zest, cream, and whip.

Step 6

Pour the filling into the prepared crust. Bake at 356°F for about 30 minutes, until the filling is set.

Step 7

Dust with powdered sugar and serve with sour cream.
