  • Skim Milk - 2 fl oz
  • Whole egg - 1 piece
  • Sugar - 1.4 oz
  • Gelatin - 0.1 oz
  • Chocolate - 4.6 oz
  • 10% cream - 3 fl oz
  • Clear Apple Juice - 3 fl oz
  • Kaffir Lime Leaves - 1 piece
  • Lemongrass - 1 piece
  • Pectin - 0.1 oz
  • Oranges - 2.5 oz
  • Lime - 0.9 oz
  • Lemon - 0.9 oz
  • Yuzu Juice - 0 fl oz
  • White Chocolate - 8.8 oz
  • Cocoa Powder - 6.2 oz
  • Yellow Sugar - 0.2 oz

Step by Step guide

Step 1

White chocolate mousse: soak gelatin in cold water.

Step 2

Bring milk and 5 grams of sugar to a boil, mix the remaining 5 grams with the yolk.

Step 3

Pour the boiling milk into the mixture and place on low heat.

Step 4

Heat to 183°F, cool, strain, and add gelatin.

Step 5

Melt the chocolate in a water bath, pour in the sauce, and blend.

Step 6

Whip the cream separately and combine all prepared ingredients into the mousse.

Step 7

Lemon jelly: bring apple juice, lemongrass, and lime leaves to a boil in a saucepan.

Step 8

Let the mixture steep for 10 minutes, then strain.

Step 9

Add sugar (30 g) with pectin, bring to a boil, add lemon pulp, bring to a boil again, remove from heat, and add yuzu juice.

Step 10

Pour the prepared filling into half-spheres and place in the freezer.

Step 11

Velvet coating: melt chocolate and cocoa butter in a water bath.

Step 12

Add coloring and blend.

Step 13

Assemble the dessert: divide the mousse into two parts: pour the first part into a silicone lemon-shaped mold, place the jelly on top, and cover with the remaining mousse through the opening.

Step 14

Place in the freezer for 8 hours.

Step 15

Remove the dessert from the mold, cover with the 'velvet' heated to 88°F, and serve.
