- 35% Cream - 1 qt
- Egg Yolk - 10 pieces
- Egg white - 10 pieces
- Powdered Sugar - 7.1 oz
- Vanilla Sugar - 7.1 oz
Step by Step guide
Step 1
Zest the lemons using a grater and squeeze the juice. Mix the zest with the lemon juice and set aside.
Step 2
Whip the cream with powdered sugar, and whip the egg whites with sugar until peaks form.
Step 3
Lightly beat the egg yolks with a pinch of sugar.
Step 4
Add the whipped egg yolks and whites to the whipped cream and gently fold. Add the lemon zest and lemon juice mixture and continue to mix.
Step 5
Place the mixture in the freezer.
