- Lemon - 4 pieces
- Sugar - 6 tablespoons
- Green peppercorns - 6 pieces
- Vanilla Pod - ½ piece

Step 1
Cut the zest from the lemons, only the yellow part, into long strips. Squeeze 6 tablespoons of juice from the lemons.
Step 2
Dip the zest into boiling water for 10 seconds. Dry and repeat once more.
Step 3
In a small saucepan, pour in the lemon juice and add sugar and pepper. Extract the seeds from the vanilla and add only the pod. Bring to a boil, stirring until the sugar dissolves.
Step 4
Add the zest, reduce the heat, and simmer for about 12 minutes until the zest becomes soft. Let it cool.
