Description

  • Lemon - 6 pieces
  • Sugar - 10.6 oz
  • Demerara Sugar - 1 tablespoon
  • Brandy - 1 fl oz
  • Agar-Agar - 2 teaspoons

Step by Step guide

Step 1

Prepare the sugar syrup: bring 600 ml of water to a boil with regular sugar and keep it on the heat for about three more minutes.

Step 2

Zest three lemons. Mix it with demerara sugar and brandy, let it marinate for about ten minutes, then add it to the syrup. Squeeze the juice from six lemons into the syrup, bring it to a boil, then remove from heat and stir in the agar-agar.

Step 3

Wait until the jelly cools slightly but is not too thick, and pour it into glasses. Chill the glasses with jelly.
