- Lemon - 3 pieces
- Sparkling water - 1 qt
- Sugar - 7.1 oz
- Starch film - 2.8 oz

Step 1
Grate the zest from the lemons and pour in the sparkling water. Place in the refrigerator for 12 hours.
Step 2
Squeeze the juice from the lemons and filter it together with the sparkling water into a pot. In a separate bowl, mix the sugar with the starch. Bring the lemon juice to a boil while stirring, then gradually add the starch and sugar mixture. Cook for 4-5 minutes, stirring, until thickened. Allow to cool slightly.
Step 3
Pour into dessert cups and place in the refrigerator for 6 hours until set.
