Lemon Lavender Gelato

Ingredients

  • Milk - 16 fl oz
  • Lemon - 4 pieces
  • Lavender flowers - 2 fl oz
  • Honey - 1 fl oz
  • Whole egg - 5 pieces
  • Sugar - 1.8 oz
  • Cream (40%) - 8 fl oz

Step by Step guide

Step 1

Using a sharp knife, zest the lemons and transfer the zest to a saucepan. Add the milk, lavender, and honey. Bring to a boil over medium heat, cover, and remove from heat. Let it sit for 15 minutes, then strain.

Step 2

In a bowl, whisk the yolks with the sugar using a mixer for about 5 minutes.

Step 3

Return the milk to the heat and bring to a gentle simmer, stirring.

Step 4

Slowly add the warm milk to the yolks while constantly whisking, then pour everything back into the saucepan with the milk, stirring continuously. Reduce the heat and cook, stirring, until the mixture thickens slightly.

Step 5

Remove from heat and add the cream. Strain through a sieve into a bowl and cool in the refrigerator for 1 hour. Then freeze in an ice cream maker or transfer to a container and place in the freezer until set, stirring occasionally.
