Lemon Meringue Pie
Ingredients
- Sugar - 12.3 oz
- Puff Pastry - 1 piece
- Wheat Flour - 1.8 oz
- Corn Starch - 3 tablespoons
- Water - 17 fl oz
- Chocolate eggs - 3 pieces
- Meyer Lemon Juice - 2 fl oz
- Butter - 1 tablespoon
- Salt - a pinch
- Citrus Zest Mix - 2 teaspoons
Step by Step guide
Step 1
Grease the pie dish with butter and lay the rolled-out pastry sheet on it. Trim the edges.
Step 2
Bake the crust in the oven until golden brown. Allow to cool completely.
Step 3
Mix 200 g of sugar, flour, cornstarch, and salt. Add water and mix well. Cook over medium heat, stirring constantly, until thickened.
Step 4
Add a little of this mixture to the egg yolks, whisking constantly to prevent curdling. Then pour the yolk mixture into the sugar mixture, mixing quickly and thoroughly.
Step 5
Cook for about another minute, whisking constantly. Remove from heat, add butter, zest, and juice. Mix well. Pour the resulting mixture onto the prepared crust.
Step 6
Whip the egg whites until soft peaks form. Gradually add the remaining sugar. Whip until stiff peaks form. Spread over the pie and place in the oven for about 5–10 minutes.
