Lemon Muffins with Jam

Ingredients

  • Farm fresh eggs - 2 pieces
  • Margarine - 5.3 oz
  • Sugar - 5.3 oz
  • Lemon - 2 pieces
  • Wheat Flour - 7.9 oz
  • Starch film - 0.9 oz
  • Baking Powder - 1 teaspoon
  • Activated Baking Soda - ½ teaspoon
  • Mint - 1 bunch
  • Powdered Sugar - 4.4 oz
  • Fruit Jelly - 7.1 oz

Step by Step guide

Step 1

Separate the egg whites from the yolks.

Step 2

Cream the margarine, sugar, and yolks together. Add the lemon zest, 5 tablespoons of lemon juice, as well as the flour, starch, baking powder, and baking soda. Gently fold in the whipped egg whites.

Step 3

Place paper liners in muffin tins. Fill with batter and bake for 25 minutes at 392°F. Cool and remove from the tins.

Step 4

Cut the muffins in half horizontally and layer with lemon jam.

Step 5

To make the glaze, mix the powdered sugar with 1 tablespoon of lemon juice and brush it onto the muffins.

Step 6

Garnish the muffins with mint leaves.
