Ingredients
- Wheat Flour - 5.3 oz
- Butter - 4.2 oz
- Farm fresh eggs - 2 pieces
- Powdered Sugar - ¼ cup
- Sugar - 7.8 oz
- Baking Powder - ½ teaspoon
- Salt - ¼ teaspoon
- Meyer Lemon Juice - 2 tablespoons
Step by Step guide
Step 1
Preheat the oven to 356°F.
Step 2
Using a food processor, hand mixer, or knife, mix the flour, butter, and powdered sugar.
Step 3
Grease a 20x20 cm (8x8 inch) square baking pan with butter. Spread the resulting crumb mixture in the pan. Flatten and compact it at the bottom of the pan.
Step 4
Bake for about 20 minutes. Remove from the oven.
Step 5
Using a mixer or whisk, beat the remaining ingredients together until smooth. Pour over the dough.
Step 6
Place in the oven and bake for 20–25 minutes. The filling will puff up while baking but will settle afterward. Let cool. Run a knife around the edges to detach from the pan. Transfer the cake to a board and cut into 16 squares.
