Lemon pie is a reliable way to capture maximum lemon freshness and juiciness without making a face. This recipe is from the realm of zero-waste cooking, using a whole lemon, including its white pith, which we often discard due to its noticeable bitterness. However, we do recommend removing the seeds, as they won’t be welcome here. Making lemon pie is simple, requiring minimal ingredients and no complicated steps. The pie should be served completely cooled, and ideally the next day after being chilled, when the flavor of the filling becomes even more vibrant.

  • Lemon - 2 pieces
  • Sugar - 15 oz
  • Wheat Flour - 7.1 oz
  • Butter - 6.3 oz
  • Water - 1 fl oz
  • Chicken Egg - 4 pieces
  • Salt - ¾ spoons

Step by Step guide

Slice the lemons very thinly into half-moons, including the peel, and remove the seeds.

Transfer the lemons to a large bowl, add 400 g of sugar, mix well, and let sit for 3 hours. Stir occasionally.

For the dough, place very cold, cubed butter into a food processor, add 180 g of flour, 25 g of sugar, and half a teaspoon of salt. Mix everything together until you achieve a coarse crumb.

While continuing to stir, slowly pour in the ice-cold water. As soon as the dough starts to come together into a ball, stop the mixer and remove it.

Divide the dough into two equal parts and shape them into round patties about 3 cm thick on a floured surface. Wrap them in plastic wrap and refrigerate for half an hour.

Whisk the eggs until smooth.

Pour the eggs into the lemons, add 20 grams of flour and a quarter teaspoon of salt. Mix well.

Remove the rested dough from the refrigerator and let it sit at room temperature for 5–10 minutes, then roll each piece into a thickness of 5–7 mm.

Place the bottom layer of dough into a 22 cm (8.6 inch) round baking pan.

Pour the lemon filling over the dough and cover it with a second piece of dough.

Pinch the edges of the dough together, trimming any excess if necessary. Use your fingers to create a wavy pattern on the crust, or press it down with a fork.

Use a small knife to make several small slits in the pie for steam to escape. Place the pie in the oven preheated to 446°F (450 degrees Fahrenheit) for 15 minutes. Then reduce the temperature to 374°F (375 degrees Fahrenheit) and continue baking the pie for another 25-30 minutes, until golden brown.
