Lemon Pie with Syrup
Ingredients
- Butter - 7.9 oz
- Sugar - 7.9 oz
- Lemon - 3 pieces
- Citrus Zest Mix - 3 pieces
- Meyer Lemon Juice - 2 fl oz
- Egg white - 4 pieces
- Wheat Flour - 7.1 oz
- Baking Powder - 1 teaspoon
- Chopped almonds - 1.8 oz
Step by Step guide
Step 1
Preheat the oven to 320°F. Grease the bottom and sides of a 20 cm round baking pan with butter and line with parchment paper.
Step 2
Beat the butter with sugar in a large bowl using an electric mixer until a pale mixture forms.
Step 3
Add the lemon zest. Gradually add the eggs to the butter mixture.
Step 4
Sift the flour and baking powder, add to the butter mixture and stir with a large metal spoon or spatula.
Step 5
Add the ground almonds and 3/4 of the lemon juice and mix well.
Step 6
Transfer to the pie pan and bake for 1 hour and 15 minutes.
Step 7
Mix the remaining lemon juice and zest with powdered sugar to form a liquid glaze and drizzle over the pie.
Step 8
Cool before serving.
