Lemon soup with fig, pistachios, and honey
Ingredients
- Fig - 4 pieces
- Date honey - 1 teaspoon
- Champagne Sorbet - 5.3 oz
- Butter - 0.4 oz
- Unsalted peanuts, shelled - 3.2 oz
Step by Step guide
Step 1
Wash the ripe figs, pat them dry with a paper towel, and cut them lengthwise into two halves.
Step 2
In a saucepan over low heat, melt the butter, place the figs cut-side down in the butter, and simmer until the color of the figs starts to change (no more than 3–5 minutes), then carefully flip them to the other side and simmer for another 3 minutes.
Step 3
Remove the figs from the saucepan and let them cool.
Step 4
In a deep plate, place a few scoops of softened lemon sorbet/ice cream, top each plate with four fig halves, drizzle with honey, and sprinkle with pistachios.
