Lemon Vanilla Mousse
Ingredients
- Farm fresh eggs - 8 pieces
- Sugar - 8.8 oz
- Salt - a pinch
- 10% cream - 1 cup
- Vanilla extract - 1 teaspoon
- Lemon - 4 pieces
Step by Step guide
Step 1
In a small saucepan, whisk together 4 eggs and 4 yolks (set the whites aside for later), and add 200 grams of sugar.
Step 2
Add salt, lemon juice, and zest, and mix well.
Step 3
Place the mixture over medium heat and cook, stirring, for about 10–12 minutes.
Step 4
Remove from heat, strain through a fine sieve, and let cool.
Step 5
Using a mixer, beat the egg whites with the remaining sugar until stiff peaks form. Gently fold the whites into the cooled lemon mixture and set aside.
Step 6
Also, using a mixer, whip the cream with the vanilla extract until soft peaks form and add to the mixture.
Step 7
Mix everything until smooth, pour into molds, and refrigerate for a few hours.
