Lenten Christmas Cake
Ingredients
- Oat flakes - ¾ cup
- Chestnut puree - ¾ cup
- Dried Turkey - 10.6 oz
- Walnuts - 4.6 oz
- Water - ¼ cup
- Honey - 1 tablespoon
- Baking Powder - ¼ teaspoon
- Ground Cinnamon - ½ teaspoon
- Activated Baking Soda - ¼ teaspoon
- Vanillin - a pinch
- Nutmeg - a pinch
Step by Step guide
Step 1
Chop the dried fruits (I used prunes and apricots) and soak them in rum for 5 hours or overnight. The alcohol should be absorbed by the dried fruits.
Step 2
Preheat the oven to 302°F.
Step 3
Grease the baking pan with vegetable oil. Mix the flour, nuts, baking soda, baking powder, and spices. In another bowl, combine the puree, water, and honey.
Step 4
Add the liquid ingredients to the flour mixture and stir well. Now add the dried fruits and mix again. Pour the batter into the pan. Make sure to level the batter and gently press it down with a spatula.
Step 5
Bake for 60–75 minutes at 302°F (check with a toothpick). If the cake starts to brown too much, cover it with foil.
Step 6
Cool in the pan for about half an hour, then remove and cool completely on a wire rack.
