Light Honey-Orange Sherbet with Spices
Ingredients
- Water - 24 fl oz
- Sugar - 7.1 oz
- Honey - 4 fl oz
- Orange zest - 1.1 oz
- Star anise - 2 pieces
- Grated Ginger Root - 0.5 oz
- Fresh Bay Leaf - 1 piece
- Orange juice concentrate - 16 fl oz
- Ground clove - 2 pieces
- Meyer Lemon Juice - 1 fl oz
Step by Step guide
Step 1
In a saucepan, combine water, sugar, honey, grated zest, ginger, star anise, cloves, and bay leaf. Bring to a boil over medium heat, stirring until the sugar dissolves. Simmer for about 12 minutes until the mixture thickens and reduces to 480 ml. Remove the bay leaf and let it cool.
Step 2
Strain the syrup into a small bowl. Add the orange and lemon juices, mix well, and pour the mixture into an ice cream maker or container. Place the container in the freezer for about 6 hours until set, stirring every 30 minutes.
