Lime and Coconut Cake
Ingredients
- Desiccated coconut - 1.8 oz
- Lime - 5 pieces
- Baking Powder - 6.2 oz
- Golden caster sugar - 6.2 oz
- Butter - 6.2 oz
- Egg white - 3 pieces
- Coconut Milk - 2 tablespoons
- Baking Powder - 1 teaspoon
- Powdered Sugar - 7.9 oz
Step by Step guide
Step 1
Grate the zest of 2 limes and squeeze out the juice. Place the zest in a bowl and cover with plastic wrap.
Step 2
In a bowl, combine the shredded coconut and the lime juice. Let it sit for about 1 hour to allow the coconut to absorb the juice.
Step 3
In another bowl, sift the flour, then add the shredded coconut, golden sugar, softened butter, beaten eggs, coconut milk, baking powder, lime zest, and mix until smooth.
Step 4
Divide the mixture into 2 parts, pour into parchment-lined baking pans, and bake in the oven at 338°F for 30-35 minutes. Let sit for 5 minutes before removing the cakes from the pans.
Step 5
Peel the remaining 3 limes into long thin curls, remove the white pith, and cut the limes into wedges. Remove the skin from each wedge, place them in a bowl, and sprinkle with powdered sugar, gently mixing. Let sit for 5 minutes.
Step 6
Spread half of the filling on one cake layer, sprinkle with half of the lime curls. Cover with the second layer, add the remaining filling, and decorate with the curls.
Step 7
Before serving, refrigerate the cake for 30 minutes.
