Ingredients

  • Shortbread Cookies - 7.1 oz
  • Butter - 4.4 oz
  • Condensed Milk - 1 can
  • 10% cream - 4 fl oz
  • Freshly squeezed orange juice - 4 fl oz
  • Orange zest - 2 teaspoons
  • Egg white - 4 pieces

Step by Step guide

Step 1

Preheat the oven to 392°F.

Step 2

Melt the butter. Crush the cookies into crumbs in a blender and mix with the melted butter. Mix thoroughly and evenly distribute over the bottom and sides of a round baking pan (20 cm in diameter).

Step 3

Bake the cake base for 5–7 minutes and remove from the oven.

Step 4

Reduce the oven temperature to 338°F.

Step 5

For the cream, beat the egg yolks, add the condensed milk, and beat well. Then fold in the cream, zest, and lime juice. Pour the cream into the pan and bake for 20–25 minutes. The cream will not set completely and will be quite soft, but when it cools and sits in the refrigerator, it will firm up while remaining very tender. The cake can be decorated with lime slices and mint leaves.
