Lime ice cream with kiwi chunks

Ingredients

  • Water - 10 fl oz
  • Sugar - 4.2 oz
  • Grated Lemon Zest - 1 teaspoon
  • Grated Ginger Root - 1 teaspoon
  • Lime Juice - 2 fl oz
  • Red Food Coloring - to taste
  • Kiwi - 2 pieces

Step by Step guide

Step 1

In a saucepan, combine water, sugar, lime zest, and ginger. Place over high heat and stir until the sugar dissolves and the mixture almost boils. Remove from heat and cool to room temperature.

Step 2

Strain the syrup into a bowl and add lime juice and a drop of green food coloring (if desired).

Step 3

Meanwhile, peel the kiwis and slice them into rounds.

Step 4

Press the kiwi rounds against the sides of the molds to hold them in place, then pour the lime mixture over them.

Step 5

Insert sticks and freeze.
