Description

Lviv cheesecake is a symbol of Lviv and a Ukrainian dessert as iconic as the Kyiv cake. It is not the typical cheese pancakes we know, but rather a type of baked custard. In the classic version, raisins and lemon zest are added to the Lviv cheesecake, but there are variations with fresh berries, cocoa, and even potatoes. The finished cheesecake is covered with glaze and is allowed to chill in the refrigerator for 4–5 hours before serving.

  • Cottage cheese - 20 oz
  • Raisins - 0 oz
  • Sugar - 5 oz
  • Butter - 5 oz
  • Citrus Zest Mix - to taste
  • Semolina - 1 tablespoon
  • Cocoa Powder - 3 spoons
  • Sour Cream - 5 oz
  • Chicken Egg - 4 pieces

Prepare the necessary ingredients.

Pass the cottage cheese through a sieve.

Separate the egg whites from the yolks.

Beat the egg yolks with 130 grams of sugar until pale, then add the cottage cheese, semolina, and 110 grams of softened butter, and mix until smooth.

Then add the rinsed raisins and lemon zest, and mix well.

In a separate clean and dry bowl, whip the egg whites until soft peaks form. Gradually fold them into the cheese mixture using a silicone spatula, carefully moving from the bottom to the top.

Generously grease a rectangular baking dish with butter and dust it with flour. Transfer the curd mixture into the dish and place it in an oven preheated to 355°F (350 degrees Fahrenheit) for 45 to 60 minutes. Allow the finished cheese cake to cool completely before removing it from the dish.

In a small saucepan, heat 70 grams of butter with 40 grams of sugar and cocoa powder until the sugar dissolves. Then add sour cream and mix until smooth.
