Ingredients
- Strawberry - 2 lbs
- Lychee - 17.6 oz
- Sugar - 1.8 oz
- Ginger - 1.8 oz
- Lime - 2 pieces

Step 1
Remove the lychee from the jar, reserving the juice, and place them in a blender along with the strawberries. Blend until smooth, then strain through a fine sieve.
Step 2
Grate the ginger and mix it with sugar, lychee juice, and lime juice. Bring to a simmer over low heat for ten minutes. Combine the syrup with pureed strawberries and lychees, then let it cool.
Step 3
Transfer the puree to a deep baking dish and place it in the freezer. After about two hours, use a fork to vigorously break up any ice that has started to form in the puree, turning the contents of the dish into a sort of icy mash.
Step 4
Repeat this procedure every two hours. Divide the result into small plates or cups and serve.
