Ingredients
- Shortcrust Cake Mix - 7.4 oz
- Sugar - 1 cup
- Light Corn Syrup - 1 cup
- Farm fresh eggs - 3 pieces
- Cream (40%) - ¼ cup
- Butter - 1 tablespoon
- Vanilla extract - 1 teaspoon
- Chopped almonds - ¾ cup
- Desiccated coconut - 1 cup
Step by Step guide
Step 1
Press the pastry into a mold about 23 cm in size and spread it evenly. Place it in the freezer for 15 minutes.
Step 2
Preheat the oven to 428°F. Bake the pastry for 8–10 minutes until golden brown. Cool in the mold.
Step 3
Reduce the oven temperature to 356°F.
Step 4
In a bowl, mix together the sugar, eggs, corn syrup, cream, softened butter, and vanilla. Stir well and add the nuts and shredded coconut.
Step 5
Pour the filling onto the pastry, smooth it out, and bake for 30-40 minutes until golden. Cool.
