  • Almond Flour - 5.3 oz
  • Powdered Sugar - 5.3 oz
  • Sugar - 5.3 oz
  • Water - 1 fl oz
  • Egg whites - 3.5 oz
  • Food Coloring - to taste

Step by Step guide

Step 1

Sift the almond flour thoroughly!

Step 2

Add the powdered sugar and mix until homogeneous. If desired, to achieve the smoothest pastries, sift again.

Step 3

For the egg whites, it's best to take them out in advance so they can sit at room temperature for about 2 hours. Usually, for 100 g, you need 3-4 eggs. In a separate bowl, pour in the egg whites and start mixing them at medium speed with a mixer until thick foam forms, then slowly start adding the sugar while keeping the mixer running. Once all the sugar is added, switch the mixer to maximum speed until 'peaks' form. The mixture should hold its shape even if you turn the bowl upside down. This is important!!!

Step 4

Using a silicone spatula, gently fold the egg whites and the flour with powdered sugar together until you achieve a thick mixture.

Step 5

Transfer this mixture to a piping bag (if you don't have one, a regular sandwich bag will work) and start piping it onto a silicone mat. Try to keep a consistent diameter.

Step 6

Once all the mixture is piped out, be sure to place a baking sheet under your silicone mat and lift and drop it 3-4 times to release any excess air from the pastries. Let the pastries dry for 30 minutes, then place them in an oven preheated to 284°F.

Step 7

You will know if your dessert is successful after 3-4 minutes. At this time, the legendary 'foot' should appear.

Step 8

Typically, the total cooking time is between 12-18 minutes.

Step 9

When the pastries are ready, take them out of the oven, let them cool, and pair them up.
