Description

Let me clarify right away: take equal parts of ribs, brisket, and sausage, the quantity is up to you. I prefer thick pancakes with machanka, like these. The ingredients for the pancakes are: 2 eggs, 300 ml of milk, 2 tablespoons of sugar (if you plan to serve pancakes with savory toppings, 1 tablespoon will be enough), a pinch of salt, 300 grams of flour, 2.5 teaspoons of baking powder, and 60 ml of vegetable oil.

  • Smoked Brisket - 10.6 oz
  • Country Bread - 10.6 oz
  • Onion - 2 pieces
  • Ground Black Pepper - to taste
  • Black Cumin (Cumin) - to taste
  • Bay leaf - to taste
  • Fresh Mushrooms - to taste
  • Chicken Egg - 2 pieces
  • Milk - 10 fl oz
  • Sugar - 1 tablespoon
  • Salt - a pinch
  • Wheat Flour - 10.6 oz
  • Baking Powder - 2½ teaspoons
  • Vegetable Oil - 2 fl oz

Step by Step guide

Step 1

In a frying pan, first add the brisket. Let it fry a bit and render the fat. Next, add the ribs. Fry them as well, but not on high heat. Finally, add the sausages. Fry for about 10–15 minutes and then add the chopped onion and mushrooms. Fry until the onion is golden on medium-low heat. Then, transfer the ribs, sausage, and onion to another container. In the remaining fat, add a couple of tablespoons of flour, quickly stir to fry the flour until light brown. Pour in prepared warm water, stirring vigorously to avoid lumps. This will create a sauce (with a consistency like sour cream). Add the sausages, ribs, and onion to the sauce. Only now taste for salt (the sausages can be salty) and add salt, pepper, cumin, and bay leaf to taste. Mix everything well and place in the oven for 30 minutes (if you don't have a Russian stove).

Step 2

For the pancakes, beat the eggs with the milk and sugar. In a separate bowl, sift the flour with salt and baking powder. Combine the two mixtures and knead a thick batter. Pour in the melted oil and mix well again. Let it sit for 5 minutes. Heat a frying pan over medium-low heat, greasing it with vegetable oil. Pour about 2 tablespoons of batter and lightly spread it into a circle — the layer of batter should be about 4 mm thick. Cook for about 1–2 minutes, then flip and cook for another minute.

Step 3

Remove the finished machanka from the oven. On plates, arrange the pancakes, meat (ribs), sausage, and drizzle the sauce over everything. Then dip the pancakes in the sauce and enjoy them with the meat and sausage.
