Ingredients
- Mandarins - 6 pieces
- Chicken Eggs - 6 pieces
- Almond Flour - 10.6 oz
- Baking Powder - 1 tablespoon
- Jerusalem Artichoke Syrup - 4 tablespoons
- Coconut Sugar - 2.5 oz
- Whiskey - 2 tablespoons
- Butter - 0.7 oz
Step by Step guide
Step 1
Wash 4 mandarins, dry them, and grate the zest. Peel and blend the remaining mandarins.
Step 2
Add the eggs, flour, baking powder, and syrup to the mandarins. Whisk together.
Step 3
Fold in the zest. Then pour the mixture into a baking pan (a 30 cm diameter pan was used in this recipe).
Step 4
Bake in a preheated oven at 320°F for 50–60 minutes.
Step 5
Remove the finished cake from the oven and let it cool. Then remove it from the pan.
Step 6
For the glaze, wash the remaining mandarins, dry them, grate the zest, and squeeze the juice from the pulp.
Step 7
Pour the mandarin juice into a saucepan, add the sugar. Melt while stirring and let excess liquid evaporate.
Step 8
After 5 minutes, add the butter (ghee can be used), and cook until the mixture is homogeneous, stirring continuously. Let it simmer for a bit.
Step 9
Remove the finished sauce from the heat and stir in 1–2 tablespoons of whiskey.
Step 10
Drizzle the sauce over the cake, sprinkle with zest, and serve.
